Responsibility right from the start
A particular focus of the training programme is on personal responsibility. From an early stage, apprentices take responsibility for their own doughs: from weighing out the ingredients precisely, through kneading and shaping, to ensuring the correct proving time and the finished baked product. Unlike in day-to-day production, there is plenty of time available for practising and learning.
“At backaldrin, apprentices are responsible for their own doughs from an early stage. This gives them time to develop their skills in a targeted way and to discover their passion for the art of baking and confectionery,” emphasises Kevin Pusam, apprentice coordinator at backaldrin.
Alongside technical expertise, motivation, an interest in the profession and personal development also play a key role. Through regular discussions and individual support, backaldrin helps young people to develop their strengths and find their own career path.
Training with long-term prospects
The success of this approach is evident from the numerous careers that have flourished within the company. Many former apprentices have remained loyal to backaldrin for decades and now hold positions of responsibility. For example, after almost four decades with the company, Kurt Seyrkammer heads up the application technology department, whilst Kevin Pusam himself began his career as an apprentice and now oversees the training of the next generation.
The next generation also regularly excels in competitions. Several apprentices have achieved top placings at national and European championships. Former apprentice Bernhard Wandrak became European champion in 2009, and with Greta Steinhauser – who now works in the export bakery – the next contestant for the European Championship is already in the starting blocks.
A benefit for society and the trade
However, apprentice training is far more than just an investment in the company’s own future workforce. By inspiring young people to take up the bakery and confectionery trade, bakaldrin is making an important contribution to securing a supply of qualified skilled workers. Particularly in times of a skills shortage, training committed young talent is becoming increasingly important.
